One-Pan Sausage And Vegetable Rice

Sausage-based dishes are often associated with heavier meals, but pairing sausages with rice and vegetables keeps things balanced and satisfying without feeling overdone.

Cooking everything in one pan allows the flavours to combine gently, with the rice absorbing stock and seasoning while the vegetables soften. It’s a practical option when you want something filling without spending too long in the kitchen.

This kind of meal also reheats well, making it suitable for leftovers the next day.

Ingredients

  • 6 pork or beef sausages

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, crushed

  • 1 red pepper, diced

  • 1 courgette, chopped

  • 150g mushrooms, sliced

  • 200g long-grain rice

  • 500ml vegetable or chicken stock

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried oregano

  • Salt and black pepper, to taste

  • A small handful of fresh parsley (optional)

Method

  1. Heat the olive oil in a large, deep frying pan or lidded sauté pan over a medium heat.

  2. Add the sausages and cook until lightly browned on all sides. Remove them from the pan and set aside.

  3. In the same pan, add the onion and cook for 4–5 minutes until softened. Add the garlic and cook for another minute.

  4. Stir in the pepper, courgette, and mushrooms, cooking for a few minutes until they begin to soften.

  5. Add the rice, smoked paprika, oregano, salt, and pepper, stirring well to coat the grains.

  6. Pour in the stock and bring to a gentle simmer.

  7. Return the sausages to the pan, nestling them into the rice.

  8. Cover with a lid and cook on a low heat for 18–20 minutes, or until the rice is tender and the liquid has absorbed.

  9. Remove from the heat and let stand for 5 minutes before serving.

  10. Finish with chopped parsley if using.

Easy Adjustments If Needed

This recipe adapts easily:

  • Swap sausages for vegetarian alternatives if preferred

  • Use frozen vegetables if fresh aren’t available

  • Add a pinch of chilli flakes for a little extra warmth

  • Use brown rice with extra liquid and a longer cooking time

The method stays the same even if ingredients change.

Serving And Storage

Serve as it is, straight from the pan. It doesn’t need sides, but works well with a simple green salad if you want something fresh alongside it.

Leftovers can be stored in the fridge for up to two days and reheated gently, adding a splash of water if needed to loosen the rice.
