Ingredients

6 pork or beef sausages

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, crushed

1 red pepper, diced

1 courgette, chopped

150g mushrooms, sliced

200g long-grain rice

500ml vegetable or chicken stock

1 teaspoon smoked paprika

½ teaspoon dried oregano

Salt and black pepper, to taste

A small handful of fresh parsley (optional)
Method

Heat the olive oil in a large, deep frying pan or lidded sauté pan over a medium heat.

Add the sausages and cook until lightly browned on all sides. Remove them from the pan and set aside.

In the same pan, add the onion and cook for 4–5 minutes until softened. Add the garlic and cook for another minute.

Stir in the pepper, courgette, and mushrooms, cooking for a few minutes until they begin to soften.

Add the rice, smoked paprika, oregano, salt, and pepper, stirring well to coat the grains.

Pour in the stock and bring to a gentle simmer.

Return the sausages to the pan, nestling them into the rice.

Cover with a lid and cook on a low heat for 18–20 minutes, or until the rice is tender and the liquid has absorbed.

Remove from the heat and let stand for 5 minutes before serving.

Finish with chopped parsley if using.
