Simple One-Pan Dinners for Busy Weeknights

Weeknight meals often need to balance speed, nutrition and minimal washing up. One-pan dinners work well because everything cooks together, flavours develop naturally and preparation stays simple.

This article shares three complete one-pan dinner recipes that use everyday ingredients and require very little hands-on time. Each recipe is designed to be flexible and suitable for busy routines.

Why One-Pan Dinners Work

Cooking everything in one pan reduces preparation and clean-up. It also allows ingredients to roast or bake together, creating flavour without complicated techniques.

One-pan meals are easy to scale, adapt and repeat. They work equally well for family dinners, solo meals or batch cooking for leftovers.

One-Pan Chicken and Vegetable Tray Bake

Ingredients (Serves 2–3)
– 4 chicken thighs or breasts
– 500g potatoes, chopped
– 1 red pepper, sliced
– 1 courgette, sliced
– 1 red onion, cut into wedges
– 2 tablespoons olive oil
– 1 teaspoon smoked paprika
– 1 teaspoon dried herbs
– Salt and pepper

Method
1. Preheat the oven to 200°C (180°C fan).
2. Add the potatoes, vegetables, olive oil and seasoning to a large roasting tray and toss to coat evenly.
3. Place the chicken on top and season lightly.
4. Roast for 40–45 minutes, turning the vegetables once halfway through, until the chicken is cooked through and the potatoes are tender.

Simple Variations
– Swap chicken for sausages or halloumi
– Add garlic cloves or cherry tomatoes near the end

One-Pan Salmon with Potatoes and Greens

Ingredients (Serves 2)
– 2 salmon fillets
– 400g baby potatoes, halved
– 150g green beans or broccoli
– 1 tablespoon olive oil
– 1 lemon, sliced
– Salt and pepper

Method
1. Preheat the oven to 200°C (180°C fan).
2. Toss the potatoes with olive oil and seasoning and spread across a baking tray.
3. Roast for 25 minutes.
4. Add the salmon and greens to the tray, placing lemon slices over the fish.
5. Return to the oven for 12–15 minutes until the salmon is cooked and flakes easily.

Simple Variations
– Use asparagus or spinach instead of green beans
– Add a spoon of pesto after cooking for extra flavour

One-Pan Mediterranean Chickpea and Vegetable Bake

Ingredients (Serves 3–4)
– 2 tins chickpeas, drained and rinsed
– 1 aubergine, chopped
– 1 red onion, sliced
– 1 red pepper, chopped
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon dried oregano
– Salt and pepper

Method
1. Preheat the oven to 200°C (180°C fan).
2. Add all ingredients to a large roasting tray and mix well.
3. Roast for 35–40 minutes, stirring once, until the vegetables are soft and lightly browned.

Serving Suggestions
– Serve with couscous or rice
– Add yoghurt or feta on top if desired

Storage and Leftovers

– Store leftovers in the fridge for up to three days
– Reheat thoroughly before serving
– These recipes work well for batch cooking

Making One-Pan Dinners Work for You

One-pan meals are forgiving. Ingredients can be swapped based on what you have available, and portions can be adjusted easily. The key is choosing ingredients that cook at similar speeds.
