HOW TO MAKE IT

Heat the oven to 200°C (180°C fan).

Add the chopped potatoes to a large roasting tray. Drizzle with half the olive oil, season with black pepper, and roast for 20 minutes.

Remove the tray from the oven and add the onion, pepper, and courgette.

Place the halloumi slices on top of the vegetables.

Drizzle with the remaining olive oil and sprinkle over the dried herbs.

Return the tray to the oven and roast for 25–30 minutes, turning the halloumi once halfway through, until the vegetables are tender and the halloumi is golden.

Finish with lemon juice or fresh herbs if using.
