A Simple Chicken Pasta Dish That Works on Training Days

Some meals earn their place by being dependable rather than impressive. They’re easy to cook, filling enough to satisfy, and familiar enough to make without much thought. This chicken pasta dish falls into that category.

It’s designed to be cooked midweek, scaled up or down easily, and reused without needing constant variation.

WHY THIS RECIPE WORKS WELL ON TRAINING DAYS

After training, most people want something that’s warm, filling, and straightforward. Pasta is easy to portion and digest, while chicken adds substance without overwhelming the meal.

This dish avoids heavy sauces or complicated steps, making it suitable for evenings when energy is limited.

INGREDIENTS (SERVES 2)

  • 180–200g dried pasta (penne, fusilli, or similar)

  • 2 medium chicken breasts, diced

  • 1 tablespoon olive oil

  • 2 cloves garlic, finely chopped

  • 1 small onion, finely diced

  • 1 red pepper, sliced (optional)

  • 1 tin chopped tomatoes (400g)

  • Salt and black pepper, to taste

  • Dried herbs (oregano or basil work well)

  • Grated Parmesan or similar hard cheese (optional)

HOW TO MAKE IT

  1. Bring a large pan of salted water to the boil and cook the pasta according to packet instructions. Drain and set aside.

  2. While the pasta cooks, heat the olive oil in a large frying pan over a medium heat.

  3. Add the diced chicken, season lightly with salt and pepper, and cook for 5–7 minutes until cooked through and lightly golden.

  4. Remove the chicken from the pan and set aside.

  5. In the same pan, add the onion and cook gently for 3–4 minutes until softened.

  6. Add the garlic and cook for a further 30 seconds.

  7. Add the red pepper (if using) and cook for another 2–3 minutes.

  8. Pour in the chopped tomatoes, add a pinch of dried herbs, and simmer for 5–10 minutes until slightly reduced.

  9. Return the chicken to the pan and stir through the sauce.

  10. Add the cooked pasta, mix well, and warm through for 1–2 minutes.

  11. Taste and adjust seasoning if needed. Serve with grated cheese if desired.

HOW TO ADJUST THE RECIPE

This dish is designed to be flexible:

  • More filling: Increase the pasta portion slightly

  • Lighter: Reduce pasta and add more vegetables

  • Creamier: Stir through a spoon of crème fraîche or soft cheese

  • Spicier: Add chilli flakes or black pepper

MAKING IT AHEAD

This recipe keeps well in the fridge for up to two days and reheats easily in a pan or microwave. It can also be made in larger batches to reduce cooking during busy weeks.

WHY SIMPLE RECIPES STAY IN ROTATION

Meals that are easy to repeat are more likely to be eaten regularly. This dish doesn’t rely on exact measurements or specialist ingredients, which makes it easier to adapt without losing structure.
