HOW TO MAKE IT

Bring a large pan of salted water to the boil and cook the pasta according to packet instructions. Drain and set aside.

While the pasta cooks, heat the olive oil in a large frying pan over a medium heat.

Add the diced chicken, season lightly with salt and pepper, and cook for 5–7 minutes until cooked through and lightly golden.

Remove the chicken from the pan and set aside.

In the same pan, add the onion and cook gently for 3–4 minutes until softened.

Add the garlic and cook for a further 30 seconds.

Add the red pepper (if using) and cook for another 2–3 minutes.

Pour in the chopped tomatoes, add a pinch of dried herbs, and simmer for 5–10 minutes until slightly reduced.

Return the chicken to the pan and stir through the sauce.

Add the cooked pasta, mix well, and warm through for 1–2 minutes.

Taste and adjust seasoning if needed. Serve with grated cheese if desired.
