It is a useful option if you want a balanced dinner that feels satisfying without relying on takeaway food or ultra-processed convenience meals. It also works well for batch cooking, so you can make extra portions for lunches or future dinners.

This version keeps the method straightforward and the ingredients easy to find, making it suitable for beginners as well as confident home cooks.

Ingredients

Serves 4

  • 500g turkey mince
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 red pepper, chopped
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp mild chilli powder (adjust to taste)
  • 2 tbsp tomato purée
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin kidney beans, drained and rinsed
  • 200ml water or stock
  • Salt and black pepper to taste
  • 250g dry rice

Optional toppings:

  • fresh coriander
  • sliced spring onion
  • Greek yoghurt
  • grated cheese
  • avocado

Method

Step 1: Cook the rice

Cook the rice according to the packet instructions. Set aside and keep warm.

Step 2: Soften the vegetables

Heat the olive oil in a large frying pan or saucepan over a medium heat. Add the onion and pepper, then cook for 5 to 6 minutes until softened.

Add the garlic and cook for another 30 seconds.

Step 3: Brown the turkey mince

Add the turkey mince to the pan. Break it up with a spoon and cook until browned and no pink remains.

Step 4: Add flavour

Stir in the cumin, smoked paprika, chilli powder, and tomato purée. Cook for 1 minute so the spices become fragrant.

Step 5: Simmer

Add the chopped tomatoes, kidney beans, and water or stock. Stir well and bring to a gentle simmer.

Cook for 15 to 20 minutes, stirring occasionally, until the chilli thickens and the flavours develop.

Season with salt and black pepper to taste.

Step 6: Serve

Spoon the rice into bowls and top with the turkey mince chilli. Add any optional toppings you like.

Simple swaps and variations

This recipe is flexible, which makes it useful for regular meal rotation.

You can try:

  • brown rice instead of white rice
  • black beans instead of kidney beans
  • extra vegetables such as courgette or mushrooms
  • fresh chilli for more heat
  • turkey mince replaced with lean beef mince
  • cauliflower rice if preferred

Storage and meal prep

Allow leftovers to cool, then store in an airtight container in the fridge for up to 3 days.

You can also freeze portions for future meals. Defrost fully and reheat until piping hot.
