Simple Tomato And Lentil Soup For Everyday Meals

Some recipes are designed to impress. Others are designed to be returned to. This soup firmly belongs to the second category. It’s the kind of meal that fits quietly into everyday life, using ingredients that are easy to find and steps that don’t require much attention.

Tomato and lentil soup appears in many cuisines in one form or another. What they tend to share is balance: gentle sweetness from tomatoes, earthiness from lentils, and a texture that feels filling without being heavy. This version is deliberately straightforward. It’s not meant to surprise. It’s meant to work.

Why this combination works

Tomatoes and lentils complement each other well. Tomatoes bring acidity and freshness, while lentils add body and substance. Together, they create a soup that feels complete without needing cream, cheese, or complex seasoning.

Red lentils are particularly suited to this type of dish because they break down easily as they cook. The result is a naturally thick soup without the need for blending, although it can be blended if preferred.

Ingredients

This recipe uses basic cupboard and fridge ingredients. Quantities are flexible and forgiving.

  • Olive oil

  • One onion

  • Two garlic cloves

  • One teaspoon ground cumin

  • One teaspoon ground coriander

  • A pinch of smoked paprika

  • One tin chopped tomatoes

  • One litre vegetable stock

  • 150g red lentils

  • Salt and black pepper

  • Optional squeeze of lemon

Method

Start by warming a little olive oil in a large saucepan over a medium heat. Add the onion and allow it to soften slowly. There’s no need to rush this stage; letting the onion cook gently helps build depth without browning.

Add the garlic, cumin, coriander, and smoked paprika. Stir briefly until the spices release their aroma. This usually takes less than a minute.

Pour in the chopped tomatoes and vegetable stock, then add the lentils. Stir well and bring the soup to a gentle simmer.

Once simmering, reduce the heat and let the soup cook for around 20 to 25 minutes. The lentils should soften and begin to break down, thickening the liquid naturally. Stir occasionally to prevent sticking.

Season with salt and black pepper. A small squeeze of lemon at the end can lift the flavour, but it’s optional.

Texture and serving

This soup can be left chunky or blended smooth, depending on preference. Both versions work well. Served with bread, toast, or on its own, it fits easily into lunch or evening meals.

It keeps well in the fridge for several days and often tastes better the next day, once the flavours have had time to settle.

Why it suits everyday eating

This recipe doesn’t demand attention or precision. It can be adjusted without much thought, doubled easily, and reheated without losing quality. It’s filling without being heavy, and simple without feeling sparse.

Meals like this are rarely exciting, but they are often the ones that quietly support regular, balanced eating over time.
